Chewy Peanut Butter Cookies - #BundleMarathon

These peanut butter cookies are very fast and easy to make.  They don’t require any fancy techniques or complicated steps.  These are very gooey and chewy.  Although they tend to become quite flat, the taste totally makes up for it!

Ingredients:
2 1/2 cups all-purpose flour
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
2 sticks softened butter
1 cup packed light brown sugar
1 cup granulated sugar
1 cup extra-crunchy peanut butter
2 tsp. vanilla extract
2 large eggs

Instructions:
Pre-heat oven to 350˚F. Whisk together flour, salt, baking soda, and baking powder in a large bowl and set aside.
In a mixer fitted with the paddle attachment, beat together softened butter and both sugars until light and fluffy (3-5 minutes). Mix in peanut butter until incorporated, about 30 seconds on medium. Add vanilla and eggs, one at a time, scraping after each addition. Reduce mixer to low and slowly add dry ingredients, just until incorporated.
Take 3 tablespoons of the dough and roll into a ball and place on a parchment lined baking sheet.

Using a fork dipped in cold water, make a cross in the dough. Repeat with the rest of the dough, keeping 2 inches apart on the baking sheet.

Bake for 10-12 minutes, rotating halfway between cooking time, and just until the edges are golden brown and the centers are puffy. Cool on a wire rack and then enjoy!

Yield: 24 cookies

Here are some tips that’ll help you make chewy, flat, puffy, or crispy cookies!
(Found at http://allrecipes.com/howto/perfect-cookies/ )

If you have a cookie recipe that you love, but aren't getting the desired results, use these tips to get your perfect cookie:

Flat If you want your cookies on the flat side, you can do some or all of the following things: Use all butter, use all-purpose flour or bread flour, increase the sugar content slightly, add a bit of liquid to your dough, and bring the dough to room temperature before baking.

Puffy For light, puffy cookies, use shortening or margarine and cut back on the amount of fat; add an egg, cut back on the sugar, use cake flour or pastry flour, use baking powder instead of baking soda and refrigerate your dough before baking.

Chewy Try melting the butter before adding it to the sugars when mixing. Remove cookies from the oven a few minutes before they are done, while their centers are still soft but are just cooked through. The edges should be golden. Use brown sugar, honey or molasses as a sweetener. Let cookies cool on the pan for several minutes after baking before transferring to cooling rack.

Crispy For crisp, crunchy cookies, use all butter and a proportion of white sugar. Use egg yolks in place of a whole egg. Cookies should be baked completely. Let cool on the baking sheet for one minute before transferring to a cooling rack.

♥ Strawberry Presto Mini Cupcakes ♥

Strawberry Presto Mini Cupcakes with Reese's Peanut Butter Cups
Recipe by me
Ooh.... I can already taste these!
Santa Hat Cheesecake Bites! {No Bake}
The cupcakes will sort-of look like this.  Photo courtesy of Bubbly Nature Creations.

The reason these cupcakes are called "Strawberry Presto Mini Cupcakes" is because they have strawberries on them and because they are so easy to make!  There a NO BAKE project!

Ingredients/Materials

Reese's Peanut Butter Cups (the original)

Icing (any color and/or flavor!)

Strawberries

Step 1

You will need one Reese's Peanut Butter Cup and one strawberry for each mini cupcake.  First take a Reese's Peanut Butter Cup and flip it upside down.  Next, ice the top of it with frosting (if your like me, you'll use lots of frosting).  And then cut the stem off the strawberry and make it to where the strawberry it flat on the side the stem was on.  Put the strawberry on the Reese's Peanut Butter Cup, making sure the flat side is sticking on the frosting.  Now devour it!  These make the perfect finger foods for your next party!

Thanksgiving Treats

Hi --

I was planning on doing a blog post on Monday, but I have been way busy and got a little behind.  I had a million ideas for this blog post, but I will keep most of them secret for now.  Since it is so close to Thanksgiving, I decided maybe some treat ideas would be pretty good.  And also, this is the perfect blog post for me to announce the winners for our latest contest!

First, I will share a few treats with you.  (I found them on the internet -- baking may not have my best interest.  Seriously, all I can make is mac and cheese and cookies and cakes -- nothing else.)

Sweet Scarecrows

What you'll need

  • Cookies (ours were about 2 1/2 inches in diameter)
  • White frosting
  • Assorted sugar wafers (ours were about 2 1/2 inches long)
  • Candy corn
  • Mini chocolate chips
  • Bran cereal (we used Kellogg's All-Bran Extra Fiber)
  • Chocolate sprinkles

How to make it

  1. Frost the top of each cookie.
  2. Sweet Scarecrows - Step 2
Cut a sugar wafer in half. Add a dollop of frosting to the top edge of the cookie and stick a wafer half to it for a hat top, as shown.  Place a whole sugar wafer just below the hat top for a brim. Use a little more frosting to decorate it with slices of candy corn or mini chocolate chips.  Press pieces of bran cereal hair into the frosting around the hat.

Maple Pumpkin Custard

What you'll need

  • 1/3 cup sugar
  • 6 egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • A pinch of ground cloves
  • 1/8 teaspoon salt
  • 1 cup light cream
  • 1 cup heavy cream
  • 2/3 cup solidly packed pumpkin mash or canned pumpkin
  • 1/2 cup pure maple syrup

How to make it

Heat the oven to 300º F. In a large mixing bowl, whisk together the sugar, yolks, vanilla extract, spices, and salt. Set the mixture aside.

In a medium-size saucepan, whisk together the light and heavy creams, pumpkin, and maple syrup, then bring the mixture to a simmer over medium-low heat, stirring occasionally. Do not let the mixture boil.

Remove the pan from the heat once the pumpkin mixture is hot, about 5 minutes. Add it by the ladleful to the yolk mixture, stirring continuously. Don't pour it all in at once or it will cook the yolks too quickly.

Once the mixtures are blended, divide the custard evenly among 6 standard custard cups. Pour 3/4 inch of hot water into a large, shallow casserole dish, then arrange the cups, evenly spaced, in the dish. Bake the custards, uncovered, on the center oven rack until their centers are jiggly but no longer soupy, about 45 to 50 minutes. Carefully transfer the cups to a wire rack to cool.

When the custards reach room temperature, cover the dishes individually with plastic wrap and refrigerate them for at least 6 hours. Makes 6 servings.
